Cozy Thanksgiving Making Empanadas at Home

It’s the time of year where we’re usually surrounded by family and friends, hosting get togethers, and reminiscing of good times. But this year, we’ve enjoyed a cozy Thanksgiving just my husband and me in our new home for the first time.

We spent the day making empanadas from scratch, sitting at our kitchen table. Since my husband’s vegetarian, we decided to try substituting the ground beef with Impossible Meat.

Here’s the recipe for the empanadas as well as the chimichurri sauce. There are several steps, especially with pastry so I’d recommend starting early. We ate a few for our Thanksgiving dinner and froze the rest in the freezer for a busy day.

I’m incredibly thankful this year for our family, good friends, our new home, and especially my husband. COVID has been tough for many people this year, but with anything dark, there are also bright spots to cherish and be thankful for.
