Celebrating Fall with Homemade Apple Pies

I love the fall - the crisp morning air, the changing colors of the leaves, the gathering of friends & family, the coziness, and oh the festivities. To celebrate the first day of fall, we gathered with friends to pick apples at my old boss’s home and make apple pie. Yoshi joined along too, though he spent most of the time running around and giving folks the puppy eyes (even though he doesn’t actually like apples).

After we picked apples, we diced them into cubes, mixed in the spices, and slowly poured everything into a pie shell. We placed a generous mound into each pie shell as everything tends to shrink down during baking. We placed a few dots of butter, then covered with a flour mix on top and slowly packed it all around to form a continuous dome.

Since we had so many pies, we wrapped several up in tin foil to take home to bake. We baked around two for the evening for dessert, topped with vanilla ice cream.
