Mini Banana Bread Mornings

One of the things I’ve learned about myself over the years is that I need a little bit of spontaneity every day. It breaks up the routine of days with something special. More recently, it was making mini bundt banana bread at 10pm and having it for breakfast the next morning.

Check out below for the recipe. For the bundt definition - a trick I learned from other bakers is to butter the pan right before you bake so that it doesn’t pool at the bottom. Then, lightly dust the surface with flour, avoiding clumps. Immediately after, pour in your batter.

Recipe

supplies

  • Mini bundt pan

  • Brush

  • Mixing Bowl

  • Spatula

  • Measuring cup

  • Measuring spoons

  • Scoop (for pouring dough into pan)

  • KitchenAid Mixer or beater

  • Oven

ingredients

  • 1.5 cup flour

  • 0.5 cup sugar

  • 1tsp nutmeg

  • 1 tsp baking soda

  • 0.5 cup butter (for batter, melted)

  • 1 egg

  • 1tsp vanilla

  • 2-3 brown bananas

  • 1 tbsp butter (for coating pan)

recipe instructions

  1. Preheat oven to 350F

  2. Mix all dry ingredients together

  3. Mix all wet ingredients together

  4. Slowly combine the two to avoid clumps

  5. Mix in bananas

  6. Melt ~ 1 tbsp of butter in the microwave for 20-30s

  7. Use brush to lightly coat baking pan

  8. Dust in some flour. Avoid clumping.

  9. Scoop in an even amount of batter per cakelet mold (for a 6-cakelet pan, you’ll need to bake two rounds)

  10. Bake for 20-25min

  11. Once done, tap the banana bread out and cool on baking rack. Enjoy!
